Buttermilk Substitution

Hello All,

The substitution for Buttermilk was omitted in the first edition of the LHC Cookbook.  The following is Vegan Buttermilk:

To 1-cup Soy, Oat or Almond milk add 1-Tablespoon of White Vinegar, Apple Cider Vinegar or Lemon Juice.  Stir and let sit for 10 minutes or so until it has a curdled appearance.  Then use the amount called for in the recipe.  Rice milk does not work as well as those listed above.

LHC COOKBOOK

The LHC has created a cookbook of true and tried recipes that include any dietary style -Vegan, Vegetarian and Flexitarian.  A number of people have contributed to this collection, and as co-editor of the cookbook, I am requesting your input.  We are looking for desserts, salads and main courses for the next edition of the cookbook, if you have a favorite recipe please comment on this blog.  If you would like a copy of the first edition LHC Cookbook please request one by calling 734-449-4381 or come to the Center any Sunday evening before or after Candlelight and pick one up for $8.00.

For those who have purchased the first edition:  What do you think of the collection, and do you have any comments?  Have you experimented with  "I'm Writing My Own Recipe For..." and what have you found? We would love to hear from all of you!

Retreat Weekend 2009

The Retreat Weekend was one in which the Lighthouse beamed in the joy of each others' company, incredible talks and programs, and the best ingredient love.  I felt so much love from the participants and speakers.  Our next event is the "Walk for Peace" on September 12, 2009, please go to the website and check it out along with photos of the group celebrating Chitrabahnuji's birthday!

Our Appreciation Dinner in March

On Saturday, March 21st in the evening I attended my first Lighthouse appreciation dinner and was so delighted that I took the time to attend.

Here are some of the things I really liked:
  • The food, of course! We have some truly talented vegan and vegetarian chefs in our midst. This is the opportunity for us to share, and for me, to eat the delicious dishes everyone brought.
  • The people, yep! It was a time when I was able to enjoy the company of some members I don't see often and reconnect, share stories and just enjoy their company.
  • The center, the light! To hear the laughter and joy echoing through our beautiful center as we all enjoyed having dinner and some time to visit was powerful and made me always more grateful for this spiritual community.

I personally enjoyed that there was just no other agenda than to eat, share food and visit.

The board discussed this wonderful event and has decided to schedule another one for late June, I don't have the date handy, but it will be in our Beacon. Next time take a few hours and come have dinner with us or return, like I will. Enjoy the great gift this community has, ourselves!

Hi There

This is Raksha Penni Helsene. I too, am a board member, but I have been a member of the lighthouse since 1998. One thing I love about the Lighthouse is that no matter how long you have been away, you are always greeted with unconditional love and warmth.

I have learned so much about myself, about meditation, about healing...and also about Quickbooks!! Ha! I am the treasurer for the board...and Quickbooks is my nemesis.

I hope we get lots of comments out here...its a neat idea. Thanks to our webmaster Mutka Tana Dean.

My Experience on the Board of Directors

As your webmaster it seemed that becoming a board member would help me keep our website up to date and continue helping it grow as a central communication source for our spiritual community. Like other board members it's that phone call or discussion at the center where someone will ask you to commit to helping our center continue and grow.

Barbara Blanden was the one who called me and we were having a discussion which led her to ask me if I would consider becoming a part of the board. It made sense because I had felt that I needed to keep in closer contact because of the continual updates for the website.

My experience has been so wonderful. To meet and work with a group of people who are doing whatever is needed to keep our community together is inspiring. I've made some lifelong friends and it keeps me close to growing my spiritual life. The commitment has not been overwhelming and they are a group who is willing to help any other member, it is a shared responsibility.

The elections are coming up soon and I would encourage you to call someone on the board to ask what positions need to be filled. Your commitment, energy and new ideas are what keeps our community vibrant and will help it grow.

For many years this has been my spiritual home and as the years go by I gain a deeper understanding of how much this has affected my life and the deep spiritual relationships I have gained are simply invaluable.

I invite you to add your great energy and strength to the Lighthouse Board of Directors. It has been a truly wonderful experience.
